For the majority of our coffees we manage the same thorough cherry selection, a process of thermal fusion and a 3-7 day fermentation in the freshly pulped juice from the cherry and a small quantity of the same juice pre-fermented in our cold room before then drying the coffee with sun, in silo or in our dark room depending on the desired profile.
It is a process we use just before de-pulping the coffee, exposing it first to hot (80C) and then cold (15C) water, achieving two key things. Pasteurization which will give us more control of the fermentation and the creation of more simple sugar (fructose) which will help in the quality of the fermentation and complexity of flavour and sweetness in the final cup.
