The biological impact of bees on coffee quality

Coffee is a living system. If the ecosystem isn’t healthy, the cup won’t be either. And within that system, there is one driver of quality and evolution that is frequently overlooked: the honeybee.
Our Nogales farm spans 27 hectares and is home to approximately 40,000 coffee trees. To support this ecosystem, we have integrated 25 beehives, placed with intention across our landscape. Their role goes far beyond simple pollination; they are the unseen ‘architects’ of our farm’s productivity, genetic diversity, and ultimately, part of the character of the coffee you drink.
The Logistics
Nogales is defined by its steep terrain. We positioned our hives at the lowest point of the farm. Bees are most efficient when they fly uphill while "light" and return downhill carrying the weight of their forage. By aligning the location of our hives with the physical topography of the farm, we minimize their energy expenditure, allowing them to cover the full 27 hectares more effectively. It is a simple alignment of biological activity with the physical structure of the mountain.
Fruit Set and Density
While Coffea arabica is technically self-pollinating, the presence of pollinators provides measurable benefits that elevate the entire harvest. Bee activity improves "fruit set": the critical transition from flower to cherry.
Effective pollination leads to three tangible outcomes in our trees:
A higher success rate: More flowers develop into viable cherries.
Uniform ripening: When pollination is consistent across the tree, the cherries mature at a similar pace, facilitating a more precise harvest.
Increased bean density: Proper fertilization leads to fuller, more developed seeds, which are the primary foundation of high cup quality and dense, vibrant flavors.
The Bourbon Pimienta Story (Or Ají, however you’d like to call it)
Perhaps the most fascinating aspect of bee activity is its role in genetic variation. When bees move between trees, especially in a farm where Bourbon, Caturra, Castillo, and Ethiopian-derived selections grow side by side, they transfer pollen between genetically distinct plants.

Most of the time, these cross-pollination events go unnoticed. However, occasionally, they create a "biological anomaly" that changes the course of a farm.
A well-known example of this in Colombian coffee history is the Bourbon Pimienta. This selection, famous in Huila, is characterized by a distinct pepper-like aroma at the cherry stage. Crucially, Bourbon Pimienta did not emerge from a lab or a controlled breeding program. It emerged from nature: likely a combination of natural cross-pollination and mutation, which was then observed, selected, and propagated by coffee producers and farmers over time.
This is the beauty of a living farm: new profiles can enter the system not through human design, but through interaction. By fostering a high-activity bee population, we aren't just producing coffee; we are participating in the gradual, natural evolution of the crop.
Diversity as Resilience
We do not view cross-pollination as a threat to our varieties; we view it as a form of resilience. Greater genetic variation within the farm acts as a buffer against climate variability, pests, and disease pressure.
In a system reliant on genetic uniformity, a single stress event can jeopardize the entire harvest. In a diverse system, some trees will naturally perform better under stress than others. By observing these trees, we can select and nurture them, allowing the farm to adapt to its local microclimate in real-time.

A Managed Ecosystem
For this biological engine to function, the farm must be a healthy environment. Bees are sensitive creatures, and they can only perform their work in a clean ecosystem.
At Nogales, this is why we operate with a strict policy of zero synthetic agrochemicals. We do not use insecticides, chemical herbicides, or high-impact fungicides. Instead, we rely on natural, biodegradable inputs and the internal balance of a healthy soil and canopy.
The bees are part of this equilibrium, not an external tool. They connect plant biology, terrain, and farm management into one continuous, sustainable process. This relationship is a form of symbiosis, where both the coffee trees and the bees depend on each other to function at their best.
Conclusion: Trusting the System
The role of bees in coffee is often reduced to "pollination." But at Nogales, we see them as collaborators in evolution. They influence how our plants reproduce, how our cherries develop, and how new flavor profiles emerge over time.
Not everything in coffee is planned. Some of the most beautiful results in the cup are the products of movement, interaction, and time.

Dictionary
Agrochemicals: Synthetic chemicals such as insecticides, herbicides, and fungicides used in industrial farming. We maintain a "zero synthetic agrochemicals" policy at Nogales, opting for natural, biodegradable inputs.
Biodiversity: The total variety of life within our ecosystem, including plants, animals, and insects. A farm with high biodiversity creates a self-regulating environment where nature assists in essential tasks like pollination.

Genetic Variation (Diversity): The natural differences in DNA between plants. A farm with high genetic variation is far more stable, as a diverse population is significantly more resistant to disease than a uniform crop.
Pollinator: Any animal or insect responsible for moving pollen from one flower to another. Our bees act as the primary pollinators at Nogales, ensuring our coffee trees reproduce efficiently.
Pollination efficiency: The measure of how effectively pollinators transfer pollen between flowers. High efficiency results in a higher percentage of flowers successfully developing into cherries, which directly creates a more consistent and productive harvest.
Resilience: The capacity of our farm to stay strong and recover quickly when facing environmental stressors like pests or climate shifts. A diverse, healthy ecosystem builds the natural resilience needed to protect our harvest.
Selection (Farmer-Selected Line): A line of coffee plants identified and preserved by us because of unique, superior traits—such as exceptional flavor—rather than being developed in a laboratory. These selections represent a dynamic partnership between nature and our observation in the field.
Symbiosis: A mutually beneficial relationship where two different organisms help each other survive. Our bees and coffee trees exist in a perfect symbiosis: the bees pollinate our trees to ensure production, while the trees provide the nectar the bees need to thrive.
