The Importance of Biocompost
Coffee quality doesn't begin with fermentation—it starts in the soil. At Nogales, our biocompost plant plays a fundamental role in our regenerative farming model. This is where we process all the mucilage and coffee pulp from our wet mill, transforming organic waste into a nutrient-rich, bioavailable fertilizer for our soils and coffee trees.

The Process: Closing the Nutrient Loop
After the coffee cherries are processed, the leftover pulp is mixed with coffee husks (cascarilla) and transferred to dedicated compost pits. To accelerate healthy decomposition and enrich the biological activity, we inoculate the mixture with native Mountain Microorganisms (MM), which are cultivated directly at our organic fertilizer plant on Finca Nakura.
The mixture is turned and aerated regularly over a period of 2 to 3 months. We approach this process with technical precision because soil requires a balanced mix of minerals, beneficial microorganisms, and organic matter to thrive. By returning composted pulp to the fields, we are simply giving back to nature what it gave to us.
Targeted Application & Regenerative Impact
Across modern agriculture, coffee soils face three major threats: monoculture farming, chemical herbicide use, and erosion. To counter these issues, Nogales practices regenerative coffee farming based on three key pillars:
Restoring Organic Matter: Rebuilding degraded soils and improving their physical structure.
Root System Stimulation: Providing plants with the essential nutrition needed to grow strong, healthy root networks.
Quality Improvement: Healthy soils produce balanced trees, directly translating into better bean density, physical quality, and complex sensory profiles in the cup.
From processing around 50,000 kg of export-grade coffee annually, we generate roughly 20 to 25 tons of mature biocompost per year. Because Finca Nakura naturally possesses rich organic matter, this high-nutrient biocompost is currently applied twice a year specifically to the high-value varietals on Finca Nogales, ensuring these delicate trees receive maximum nutritional support.
Dictionary
Bioavailability: The ease with which plants can absorb and utilize nutrients present in the soil. Our technical composting process breaks down raw organic material so tree roots can readily take up essential minerals.
Biocompost: A nutrient-dense, organic fertilizer produced through the controlled biological decomposition of farm waste, such as coffee pulp, mucilage, and husks (cascarilla).
Mountain Microorganisms (MM): Native beneficial microbes collected from virgin forest soils and cultivated on-farm. They accelerate organic breakdown, suppress harmful pathogens, and revitalize soil biology.
Mucilage: The sticky, sugar-rich gel layer surrounding the coffee seed inside the cherry. In our biocompost plant, it serves as a primary energy source for beneficial microbes during fermentation.
Regenerative Agriculture: A farming approach focused on restoring soil health, increasing biodiversity, and improving the water cycle—moving beyond simple sustainability to actively heal and improve the farm ecosystem over time.
Root Stimulation: The activation of a plant's root system to absorb water and nutrients more efficiently, built by maintaining healthy, living soil rich in organic matter.
Soil Erosion: The wearing away of topsoil caused by wind, heavy rainfall, or poor land management. Regenerative practices protect soil structure and prevent nutrient loss on steep mountain terrains.
